The R H Forschner by Victorinox Paring Knife features high carbon, stainless steel blade, hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria.

This is a very sharp little knife for peeling and slicing vegetables -- I even managed to slice pieces of ham with it in a hurry for my lunch. However, if you have big hands like I do, this is not the perfect paring knife for you. The knife is light-weight and the handle is and much too small for my hands -- I prefer a paring knife with a thicker handle. For this reason, I give this knife four (4) stars.

I, like so many others, read about this knife in "Cooks Illustrated". It is a good little knife, no doubt about it. I do find myself reaching for it a lot. It lost some sharpness pretty quickly but sharpened back up on a rod-style sharpener and I have an electric knife sharpener that will probably work fine when the time comes. If you don't have an inclination or ability to sharpen it, then you might be disapointed down the road.
The handle is a bit dinky and the whole knife feels a little cheap compared to some of my "nicer" knives but it is extremely maneuverable and quick. Perfect for slicing an apple or other fruit. It's a nice way to round out an order for free shipping!

I bought several of these paring knives. I kept two for myself and gave some as gifts. I'm very happy with my purchase. I would definitely purchase this knife again. I have also bought the Victorinox chefs knife. It had a much sharper blade than the paring knife when new. I would highly recommend both these knives. Great knives with good prices.

It stays sharp for a long time, just like my 8" Victorinox Chef's Knife (which I love). However, the handle feels really loose and the metal blade is flexible and bends around. It does the job, though, and was worth what little I paid for it. But I eventually want to spend more money on better quality (because I don't think in this case I can spend as much or less for better quality - it was on sale for about $8, I think). If you're just starting out in your new home as a beginner cook, like I was, I guess I'd recommend. Otherwise, go for something else.

I just love this knife. I am planning on buying three more for my relatives for Christmas presents. It does a great job plus it is very easy to use. Last night I pared white potatoes for french fries, the knife just slides over the potatoes ever so gently. For the price it is a best value.
